Three cups of chicken is a traditional Jiangxi dish, because it does not add soup when cooking, only one cup of rice wine, one cup of lard, and one cup of soy sauce, so it is named three cups of chicken. This dish has a red sauce, original flavor, and mellow aroma. It is suitable for both wine and rice.

  1. Chop three yellow chicken into 4cm pieces.
  2. Peel the green onion and cut into slices, shred the purple onion, slice the ginger and garlic, and cut the colored pepper into triangle pieces for later use.
  3. Pour clean water into the pot and boil it over high heat. Add the chicken nuggets and blanch for 2 minutes, then remove the floating foam on the surface with clean water and drain well.
  4. Pour oil and sugar into the pot, fry the sugar over medium and low heat, and when the sugar slowly turns dark brown and light brown bubbles again, put in the chicken nuggets, stir fry quickly, and let the sugar color wrap around Chicken nuggets outside. Serve after being fried. (If you can't master the sugar color, you can omit it and use soy sauce to color it).
  5. Wash the wok and boil dry, pour a small amount of oil, and saute the garlic and ginger slices.
  6. Put in the chicken nuggets, pour in the Huadiao wine that has covered 1/2 of the chicken nuggets, then add water to cover 2/3 of the chicken nuggets, add light soy sauce and dark soy sauce, cover and simmer for 20 minutes.
  7. Open the lid, change to high heat and continue to cook for 3-5 minutes. After the soup becomes thick, add the colored peppers and onions and stir fry. Finally, add the sesame oil and stir evenly, then turn off the heat
